Vegan Chocolate Chip Pumpkin Bread

Ingredients
  

Dry

  • – 2 cups plain all purpose flour
  • – 1 1/4 tsp baking powder
  • – 1 tsp bicarbonate of soda
  • – Pinch salt
  • – 2 tsp cinnamon
  • – 1/4 tsp nutmeg
  • – 3/4 tsp ground ginger
  • – 1/4 tsp all spice or cloves
  • – 1 cup sugar such as brown or caster sugar
  • – 3/4 cup dark chocolate chips – reserve a few for topping

Wet

  • – 1 cup pumpkin puree I use tinned
  • – 2 tsp vanilla extract
  • – 1/4 cup mild olive oil or any neutral tasting oil
  • – 2/3 cup dairy free milk of choice such as oat or soya

Instructions
 

  • Preheat your oven to 180C and grease and line a loaf tin.
  • Stir the dry ingredients together (apart from the chocolate chips) in a large bowl.
  • Whisk the wet ingredients together in another bowl.
  • Add the wet to dry and mix until a smooth batter forms (don’t over mix), then fold in the chocolate chips. Pour into the lined loaf tin and top with a few more chocolate chips and bake in the centre of the oven for 50-55 minutes, until golden brown and a skewer comes out clean!
