Beer Battered Vegan Fish Tacos

Ingredients
  

  • 400 g jackfruit squeezed
  • 1 tbsp fish seasoning
  • 1 tbsp ACV
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 1 tsp paprika

Mango Slaw:

  • 20 g red cabbage diced
  • 20 g white cabbage diced
  • 2 shallots diced
  • 3 tbsp of grated carrots grated
  • 1 tsp sugar
  • squeeze of 1 lime
  • 1 mango diced

Dry Batter:

  • 11/2 AP flour
  • 1/2 cornmeal
  • 2 tbsp cajun seasoning
  • 1/2 tsp salt

Wet Batter:

  • Same ingredients as the dry batter
  • 50-100 ml light beer

Instructions
 

  • First squeeze as much moisture from the jackfruit pieces as possible. Then add to a bowl with fish seasoning, ACV, garlic powder, paprika, black pepper and dash of salt. Mix this together and leave to marinate for 20-30 mins
  • In a separate bowl add red & white cabbage, carrots, sugar, lime, mango and mix together and set aside.
  • Add flour to a separate bowl with cornmeal and Cajun seasoning and all purpose seasoning and mix together.
  • Divide this into two bowls and add light beer into one, mix together until you have a creamy consistency. This will be your wet batter.
  • Add the marinated jackfruit pieces to the dry batter and then into the wet batter. Shallow fry pieces until brown.
  • Served with a fried taco in chili oil, vegan mayonnaise, fish battered pieces, mango slaw with coriander and siracha sauce.
