Ingredients
  

  • * 1 cup masarepa corn flour for example P.A.N Harina that is especially for arepas, another brand is GOYA, NOT masa harina or regular corn flour
  • * 1 1/4 cup lukewarm water 510 ml
  • * 1 tsp sal
  • Filling
  • * 400 g oyster mushrooms or similar or tofu/jackfruit or vegan chicken
  • * 1 garlic clove
  • * 1 onion
  • * Olive oil to taste
  • * Paprika seasoning for white meat or herbs and salt
  • * 1 small avocado
  • * 3 tbsp vegan mayo
  • * Lemon juice to taste
  • * Salt and pepper to taste

Instructions
 

  • Mix flour with salt then add water and mix until a dough is formed.
  • Let dough rest for 5 minutes then separate into 5 bits. Roll them In your hands to create a ball and then flatten it into a disc.

  • Place the dough on a grill and cook for 5 minutes on each side, until nice and golden.
  • Set the dough aside and let cool down a bit before cutting them (don’t cut all the way through so the filling stays inside better).
  • For the filling, heat up some olive oil in a pan. Then add chopped onion and chopped garlic and cook until the onion is soft and translucent.
  • Take the mushrooms and divide them into strips with your hands by pulling them apart, then add to the pan and cook until they change color.
  • Add some paprika and herbs and salt. Increase the heat to maximum and press the mushrooms on the pan. Then transfer to a bowl.
  • Add avocado (previously mashed if its not very ripe, otherwise in pieces and it will melt with the heat of the mushrooms), mayo, some lemon juice, salt and pepper.
  • Now you can fill the arepas with the combined ingredients and Enjoy!
