Veggie Ragu Pasta Recipe

Ingredients
  

To make it fully vegan, just remove the cheese!

  • 1 medium red onion
  • 1 courgette
  • 3 cloves garlic
  • 350 g plum tomatoes
  • 500 ml veggie stock
  • 3 tbsp tomato purée
  • 120 g linguine or other pasta
  • Parmesan or nutritional yeast for vegans
  • Salt and pepper to taste
  • Basil and/or other Italian herbs

  • I’ve been making this one pan veggie ragu pasta on repeat lately and I’m can’t get enough. It’s freaking delicious, that’s all I’ve got to say. Sometimes I really can’t be bothered to boil pasta separately and then save pasta water so I just shove it in one pan and let the magic happen. And it’s simply sublime.
