Veggie Ragu Pasta Recipe
Ingredients
To make it fully vegan, just remove the cheese!
- 1 medium red onion
- 1 courgette
- 3 cloves garlic
- 350 g plum tomatoes
- 500 ml veggie stock
- 3 tbsp tomato purée
- 120 g linguine or other pasta
- Parmesan or nutritional yeast for vegans
- Salt and pepper to taste
- Basil and/or other Italian herbs
Instructions
- I’ve been making this one pan veggie ragu pasta on repeat lately and I’m can’t get enough. It’s freaking delicious, that’s all I’ve got to say. Sometimes I really can’t be bothered to boil pasta separately and then save pasta water so I just shove it in one pan and let the magic happen. And it’s simply sublime.
