Today at Ascension Media Club we are featuring Instagram user @veggie_nerd‘s recipe for Coconut Peach Oatmeal Slice.

Coconut Peach Oatmeal Slice
Ingredients
Drain a 410g (standard) tin of peaches and reserve the juice. Dice the peaches
Mix your dry ingredients:
- 100 g oats
- 100 g wholemeal flour if you use plain flour you might need a bit extra
- 30 g dessicated coconut
- 10 g flaxseed meal
- 1 tsp baking powder
- Pinch salt
Then add the wet ingredients:
- Remaining peach juice from the tin
- 100 ml soy milk
- 70 g maple syrup or agave
- 30 g melted coconut oil
- 1 tsp vanilla extract
Instructions
- Mix well and transfer to a square tin.
- Top with the diced peaches and gently press down
- Bake on 180 Degree Celsius or 356 Degree Fahrenheit for 40mins or until just golden
- Slice and enjoy!
