Today at Ascension Media Club we are featuring Instagram user @clairesharrynroberto‘s recipe for Miso Macadamia Nut Brittle.

MISO MACADAMIA NUT BRITTLE
Ingredients
- 250 ml blonde coconut sugar
- 125 ml agave syrup/monk fruit syrup/rice syrup
- 8 tsp white miso paste
- 62 ml cup water
- 1 cup roasted/raw macadamia nuts
- 2 tbsp vegan butter softened (not melted!)
- 1 tsp bicarbonate of soda
- Flaky sea salt to garnish
Instructions
- Line a baking tray with parchment paper/silicon baking mat.
- To a heavy-bottom pot over medium heat, fixed with a sugar thermometer, add in coconut sugar, syrup, miso, water, + stir continuously 4 minutes, until sugar dissolves.
- Add macadamia nuts + stir continuously until the thermometer reads 149 C/300 F (if you don’t reach the accurate temperature, the brittle will not set).
- Working quickly, remove pot from heat + immediately stir in vegan butter + bicarb until well incorporated (it will puff up like honeycomb —— this is a good thing!)
- QUICKLY pour mixture onto prepared baking tray.
- Use the back of a greased, large metal spoon to spread the hot brittle into an even layer + then garnish with flaky sea salt.
- The brittle needs to cool down completely before cracking into pieces.
- Store in an airtight container + ENJOYYYY.
