Today at Ascension Media Club we are highlighting Instagram user @healthylivingjames‘s recipe for Jackfruit Gyros.

Jackfruit Gyros
Ingredients
- 1 red onion
- 1 garlic cloves
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp ground coriander
- 2 tbsp tomato puree
- 2 tbsp maple syrup
- 1/4 cup tamari 60ml (gluten-free soy sauce)
- 1 tin jackfruit
Instructions
- Firstly, dice the onion and garlic, add to a pan with olive oil, and fry for a couple of minutes until they soften
- Now add in the spices + tomato puree + maple syrup + tamari + jackfruit and mix
- With a fork, press down the jackfruit chunks until they break apart and fry for a further 2 minutes
- Place the pan into the oven for 15 minutes at 200C (fan oven) 390F
- Finally, serve inside your flatbread
