Fried Chik’n Sandwich

Ingredients
  

  • A big cluster of oyster mushrooms
  • 1/2 cup Unsweetened plant milk
  • 1/2 cup buffalo sauce
  • 1 tsp ACV
  • 1/4 cup all purpose flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp cumin
  • 3 tsp Old Bay seasoning
  • 1 tsp adobo seasoning
  • 1/2 cup canola oil

Instructions
 

  • Create the wet mixture. In a bowl add unsweetened plant milk, ACV (apple cider vinegar), and buffalo sauce. Mix well.
  • Grab a cluster of oyster mushrooms, the size of a patty and wash well. Submerge the mushroom in the wet mixture and marinate in the fridge about 15mins (or longer, up to you)
  • Now create the dry mixture. In a separate bowl add flour, cornstarch, baking powder, all the spices (paprika, cayenne, cumin, old bay, and adobo) and combine together.
  • Grab the mushroom, transfer it to the dry mixture, and coat it all over. Transfer mushroom to the wet mixture then back to dry mixture. Repeat this for all mushroom clusters. Tip: pack the flour onto the mushroom so it gets extra crispy
  • In a skillet, heat up a neutral oil such as canola. Once it’s hot place the mushroom in the skillet and shallow fry. Do not over crowd the pot and do not touch the mushroom.
  • After about 5 minutes you can flip the mushroom to the other side and cook for another 5 mins.
  • Remove and place on a tray with paper to remove excess oil.
  • Assemble burger and enjoy
