Cajun ‘Shrimp’ Pasta

Ingredients
  

  • 150-200 g linguine cooked save ½ cup pasta water
  • Oyster Mushrooms
  • 1 or 2 tsp cajun seasonings
  • 1 tsp nori powder
  • 1 tsp all purpose seasoning
  • 1 tbsp vegan butter
  • 3 garlic cloves
  • ½ onion
  • 1 red bell pepper
  • tbsp tomato paste
  • ½ cup coconut milk
  • 1 tsp nutritional yeast
  • 1 tbsp vegan fish sauce made from seaweed
  • ½ cup cashews soaked in water overnight
  • fresh parsley

Instructions
 

  • Boil oyster mushrooms for 8-10mins. Remove from water and pat dry.
  • Carve a small piece out of the middle of each mushroom lengthwise as shown in the reel. Then cut 8mm slices along the length.
  • In a bowl add the oyster mushroom slices, cornflour, cajun, nori, all purpose and mix until pieces are well coated.
  • Heat oil in a pan and fry oyster mushrooms in oil until golden. Set the mushrooms aside on a plate.
  • Melt the butter in the same pan and then add the garlic and cook until lightly golden.
  • Add onions, bell pepper, 1 tsp of cajun, and fry for a further few minutes.
  • Add the coconut milk to the pan and simmer for about a minute. Followed by the soaked+blender cashews, nutritional yeast, pasta water and mix until well incorporated.
  • Add the cooked linguine and cook for a further 1 minute then remove from heat.
  • Top with the mushroom shrimp and fresh parsley!
