Cajun ‘Shrimp’ Pasta
Ingredients
- 150-200 g linguine cooked save ½ cup pasta water
- Oyster Mushrooms
- 1 or 2 tsp cajun seasonings
- 1 tsp nori powder
- 1 tsp all purpose seasoning
- 1 tbsp vegan butter
- 3 garlic cloves
- ½ onion
- 1 red bell pepper
- tbsp tomato paste
- ½ cup coconut milk
- 1 tsp nutritional yeast
- 1 tbsp vegan fish sauce made from seaweed
- ½ cup cashews soaked in water overnight
- fresh parsley
Instructions
- Boil oyster mushrooms for 8-10mins. Remove from water and pat dry.
- Carve a small piece out of the middle of each mushroom lengthwise as shown in the reel. Then cut 8mm slices along the length.
- In a bowl add the oyster mushroom slices, cornflour, cajun, nori, all purpose and mix until pieces are well coated.
- Heat oil in a pan and fry oyster mushrooms in oil until golden. Set the mushrooms aside on a plate.
- Melt the butter in the same pan and then add the garlic and cook until lightly golden.
- Add onions, bell pepper, 1 tsp of cajun, and fry for a further few minutes.
- Add the coconut milk to the pan and simmer for about a minute. Followed by the soaked+blender cashews, nutritional yeast, pasta water and mix until well incorporated.
- Add the cooked linguine and cook for a further 1 minute then remove from heat.
- Top with the mushroom shrimp and fresh parsley!
