Black Bean Chilli Loaded Sweet Potatoes

Ingredients
  

  • Oil⁣
  • 1 red onion diced⁣
  • 3 large garlic cloves crushed⁣
  • 1/2 tsp coriander + cayenne pepper + cinnamon ⁣
  • 1 tsp paprika⁣
  • 1 chopped chilli
  • 2 grated carrots
  • 2 cans black beans drained ⁣
  • 1 can red kidney beans drained⁣
  • 2 tbsp tomato puree ⁣
  • 680 g jarred tomato passata or 2 cans of chopped tomatoes⁣
  • 1 tbsp cacao powder ⁣
  • 200 ml veg stock⁣

Instructions
 

  • Bake sweet potatoes at 200C for 45 minutes⁣
  • In a pot add oil and fry off your garlic and onion along with the spices⁣
  • Now add in the grated carrots, beans, tomato puree, tomato passata, cacao powder and veg stock⁣
  • Stir and simmer for 15 minutes until it thickens

Notes

Don’t like sweet potatoes? Do they exact same with baking potatoes (may need a little longer to bake)
Can I freeze leftover chilli? Absolutely, just allow to cool then freeze into portions so you have a quick meal another day
