Today at Ascension Media Club we are featuring Instagram user @healthylivingjames‘ recipe for Black Bean Chilli Loaded Sweet Potatoes.

Black Bean Chilli Loaded Sweet Potatoes
Ingredients

- Oil
- 1 red onion diced
- 3 large garlic cloves crushed
- 1/2 tsp coriander + cayenne pepper + cinnamon
- 1 tsp paprika
- 1 chopped chilli
- 2 grated carrots
- 2 cans black beans drained
- 1 can red kidney beans drained
- 2 tbsp tomato puree
- 680 g jarred tomato passata or 2 cans of chopped tomatoes
- 1 tbsp cacao powder
- 200 ml veg stock
Instructions
- Bake sweet potatoes at 200C for 45 minutes
- In a pot add oil and fry off your garlic and onion along with the spices
- Now add in the grated carrots, beans, tomato puree, tomato passata, cacao powder and veg stock
- Stir and simmer for 15 minutes until it thickens

Don’t like sweet potatoes? Do they exact same with baking potatoes (may need a little longer to bake)
Can I freeze leftover chilli? Absolutely, just allow to cool then freeze into portions so you have a quick meal another day
