Big Mac Taquitos
Ingredients
Tofu Beef
- 2 blocks tofu
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1/4 cup nutritional yeast
- 3 tbsp tomato paste
- 2 tsp garlic powder
- 1 tbsp onion powder
- 1 tbsp smoked paprika
- 1 tbsp chilli powder
Mayo
- 3/4 cup raw cashews
- 1.5 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tbsp mustard
- 1 dill pickle
- 1/3 tsp garlic powder
- 1/2 tsp onion powder
- 3/4 tsp paprika
- 3/4 tsp salt
- 1/2 cup water
Tortillas
- Lettuce tomato, pickles, onion
Vegan Cheese Sauce
- ¾ cup Raw Cashews
- 1½ tbsp Apple Cider Vinegar
- 1 tbsp Maple Syrup
- ⅓ tsp Garlic Powder
- ½ tsp Onion Powder
- ¾ tsp Paprika
- 1 tbsp Mustard
- 1 smal Pickle
- ½ cup Water
- ¾ tsp Salt
Instructions
- Press your tofu & crumble it into a large bowl. Season, spread onto a baking tray, and bake at 400f for 30 minutes.
- While baking, make the mayo by blending everything together in a high-speed blender!
- Add your tofu beef & cheese sauce into your tortillas and roll them up nice and tight! Bake at 425 fahrenheit for 25 minutes until golden!
- Top with lettuce, tomatoes, pickles, and onions and that creamy Big Mac sauce!!
