Big Mac Taquitos

Ingredients
  

Tofu Beef

  • 2 blocks tofu
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1/4 cup nutritional yeast
  • 3 tbsp tomato paste
  • 2 tsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tbsp chilli powder

Mayo

  • 3/4 cup raw cashews
  • 1.5 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp mustard
  • 1 dill pickle
  • 1/3 tsp garlic powder
  • 1/2 tsp onion powder
  • 3/4 tsp paprika
  • 3/4 tsp salt
  • 1/2 cup water

Tortillas

  • Lettuce tomato, pickles, onion

Vegan Cheese Sauce

  • ¾ cup Raw Cashews
  • tbsp Apple Cider Vinegar
  • 1 tbsp Maple Syrup
  • tsp Garlic Powder
  • ½ tsp Onion Powder
  • ¾ tsp Paprika
  • 1 tbsp Mustard
  • 1 smal Pickle
  • ½ cup Water
  • ¾ tsp Salt

Instructions
 

  • Press your tofu & crumble it into a large bowl. Season, spread onto a baking tray, and bake at 400f for 30 minutes.
  • While baking, make the mayo by blending everything together in a high-speed blender!
  • Add your tofu beef & cheese sauce into your tortillas and roll them up nice and tight! Bake at 425 fahrenheit for 25 minutes until golden!
  • Top with lettuce, tomatoes, pickles, and onions and that creamy Big Mac sauce!!
