Today at Ascension Media Club we are featuring Instagram user @theakalinecouple’s recipe for Alkaline Vegan Tostones Rellenos.

Alkaline Vegan Tostones Rellenos
Ingredients
- 1 white onion
- 3 portobello mushrooms
- 1 red bell pepper
- 1 green bell pepper
- Sofrito check pinned Habichuelas Guisadas post
- Alkaline Sazón – sea salt oregano, onion powder, shallot powder, cayenne, achiote.
- 2 blended tomatoes
- 4 green or ripe burro bananas
- Grapeseed oil to fry
- Green cilantro sauce
Instructions
- Chop all of the onion, peppers, and mushrooms. Add grape seed oil to a pan.
- Fry 2 tsp of sofrito in oil before adding the onions & bell peppers
- Season with alkaline Sazón: sea salt, cayenne, achiote, coriander, oregano, & white onion powder. Cover and let the flavors build.
- Add blended tomatoes, then cook on medium heat for 5 minutes before adding chopped portobello mushrooms.
- Cook down the mushrooms until they reach a meaty texture.
- Cut burro bananas in half then fry in grape seed oil.
- Line a lime juice with parchment, then smash 1 at a time to form a cup. Refry until crispy.
- Top tostones cups with mushroom meat, cilantro, and key lime cilantro sauce (key limes, cilantro, onion, sea salt, onion powder)
